Gluten-Free Applesauce Raisin Muffins

Ingredients:

  • 3/4 cup chickpea (besan) flour
  • 6 tablespoons coconut flour
  • 1 1/2 tablespoons corn or potato starch
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon sesame or hemp seeds (optional)
  • 1/4 teaspoon sea salt
  • 1/3 cup coconut or brown sugar
  • 2 tablespoons ground flax seeds
  • 1 1/2 cups unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla
  • 1/2 cup raisins
