Roasted Asparagus and Fennel Soup

Ingredients

  • 2 bunches asparagus, chopped in 2-inch pieces
  • 1 fennel bulb, chopped in 1-inch pieces
  • 1 yellow onion, chopped in 1-inch pieces
  • 3 T olive oil
  • 4 c vegetable broth or stock
  • 1 T fresh lemon juice
  • 1 t salt
  • freshly ground pepper
  • chopped fennel fronds for garnish
