Roasted Corn & Zucchini Salad With Chili Lime Vinaigrette

Ingredients:

  • 2 ears of corn
  • 2 large zucchini, spiralized with the smallest blade
  • ½ large red onion, diced
  • Optional: Queso Fresco or Cojita
  • Salt and pepper to season corn

Vinaigrette:

  • .5 Tbsp apple cider vinegar
  • 1 Tbsp olive oil
  • Juice and zest of 1 lime
  • ½ tsp chili powder
  • ¾ tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 1 tsp honey
