Collard Wraps with Raw Mushroom Pate


  • 8 oz fresh shitake mushrooms, stems trimmed, chopped
  • 8 oz crimini mushrooms, stems trimmed, chopped
  • 1 tbs extra virgin olive oil
  • 2 tbs nama shoyu plus 2 tbs water
  • 2 tbs lemon juice or raw apple cider
  • 1 to 2 cloves garlic, minced
  • 1 pinch crushed red pepper flakes
  • small handful parsley
  • 5 sprigs thyme, stems removed
  • 1 medium carrot, shredded
  • collard leaves, thick stems cut away and blanched if desired
