Walnut-apple stuffing



  • 6 cups firmly packed diced whole grain vegan bread
  • 1 1/2 tablespoons olive oil
  • 1 large red onion, chopped
  • 2 large apples, peeled and diced
  • 3 scallions, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon fresh thyme leaves
  • 5-6 leaves fresh sage, thinly sliced, to taste
  • 3/4 cup finely chopped walnuts
  • Salt and freshly ground pepper to taste
  • 1 1/2 cups apple juice
