Gooey Chocolate Chip Pumpkin Bread

Ingredients

  • ½ cup of water
  • ¼ cup of melted coconut oil
  • 2 tbsp of chia seeds
  • 1 cup of raw pumpkin seeds, shelled
  • 1 cup of tapioca flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 tsp vanilla
  • ½ cup of pumpkin puree
  • 1 tsp of pumpkin spice
  • 2 tbsp of maple syrup
  • ½ tsp of apple cider vinegar
  • 1 cup of chocolate chips
